A dough docker is a tool that pokes small holes into your crust in order to help prevent bubbles from forming when baking. It is a small wheel that has metal spikes coming out of it, mounted on a handle. You run this over your formed dough, poking holes along the surface (without going all the way through the bottom of the dough).
